Orange Dreams, need I say more...

Orange Dreams...

Lime Dreams

Raspberry Dreams

I apologize to those who have been waiting for this post forever but it is finally here. The Recipe for orange dream cookies. I have made these for a few different parties and seriously they are always a hit so if you are looking for a great new sweet summer recipe this is it. You can also tweak the recipe too. I since have made lime dreams and raspberry dreams, both delicious. So like instead of orange juice i would use raspberry lemonade and puree some raspberries and add those to the raspberries dreams. These cookies are pretty versatile.

** Orange Dreams**

2 1/2 C. Flour

1/4 tsp. Baking Powder

1/4 tsp. Baking Soda

1/4 tsp. Salt

1 C. Butter

2 1/2 C. Powdered Sugar,divided

1 Egg

4 Tb. Orange Juice

2 1/2 Tb. Orange Zest, divided

1 tsp. Vanilla

1 tsp. Lemon Juice

1 tsp. Orange Extract

Orange Food Coloring

1 container (16 oz.) vanilla frosting

In a bowl combine flour, baking powder, baking soda and salt, set aside. In another larger bowl beat butter and 1 C. of the powdered sugar until creamy. Then add egg, 2Tb. orange juice, 1 1/2 Tb. of the orange zest, vanilla, lemon juice and orange extract. Once all that is well blended stir in flour mixture, mix well.

Shape dough into 2 logs about 2 inches in diameter on lightly floured work surface. Wrap each log on wax paper and refrigerate 3 hours or over night.

Preheat oven to 350* F. Grease cookie sheets. Cut logs onto 1/4 inch thick slices. Place 1 inch apart on prepared sheets. Bake 10 minutes or until lightly brown around the edges. Let cookies cool for about 2 minutes. Transfer to wire racks and cool completely.

Combine remaining 1 1/2 C. powdered sugar, 2 Tb of orange juice and 1 tsp. of orange peel in medium bowl; beat until blended. Add additional orange juice if necessary for desired consistency. Add a few drops of red and yellow food coloring till you get the orange you like. Glaze tops of half the cookies; let stand for 1 hour or until glaze is set. Frost other half of cookie bottoms with vanilla frosting; place second cookie on top of frosting to make sandwich cookie. Can be stored in the freezer for about a month.

Green Honey Butter!

My mom decided to have a St. Patricks party this year. We invited the Luncefords and Grandpa Swenson(who by the way has had severe alsheimers for the last few years and has trouble remebering anything for more than three seconds but is still so sweet. Got out my dads guitar and played you are my sunshine on it while singing the whole song perfectly. It was so neat to me that he could do that and almost brought a tear to my eye.) The theme was obviously green and we did follow through with the old tradition of pinching the poor lassie who wasn't wearing green. Along with our green wardrobes all of our food was green as well. I do have to say that all green food doesnt look as appetizing but it still tastes great and does make for a great St. Pattys Day party. I've posted all the pics of our green grub for you too see.

Dals B-Day

How cute is that smile!

The Big 23 Year Old

Tres Leches Cake mmm...

Dallas's birthday was Feb 3 we celebrated by eating food which seems to always intertwine its way into any event with us. We dined at that yummy Macaroni Grill and Tucanos. I got Dal tickets to the Jason Aldean concert and some new socks. Sadly to say all he has to show now are the socks because we sold the tickets so we could go down to St. George that weekend instead. I guess it is the thought that counts right. Anywho Im so glad there are many more birthdays to spend with dal and that we get to grow old together maybe I can redeem myself in years to come:)
